AGNES CAPILI
Agnes is a trained culinary chef who specializes in Spanish and French cuisine. With a Filipino background, she first started making beef tallow at the farmer’s market and slowly transitioned into food and matcha. She firmly believes that food is one of the best ways to connect people.

Mission and Values
We aspire to elevate everyday café culture by deepening appreciation for authentic matcha, supporting small producers, and celebrating diverse Pan-Asian flavors through Midwest ingredients. As we grow, we remain dedicated to staying intentional, community-centered, and grounded in the values that began at the farmers' markets.

Our Story
The name Noble Fat came to us while traveling in Barcelona with our son, Cael. We were captivated by the sight of jamón hanging and being carefully sliced—an everyday ritual that felt both humble and deeply refined. It was a reminder that fat carries flavor, history, and care. “Noble Fat” became our way of honoring that philosophy: respecting tradition, celebrating richness, and finding beauty in the details.
2017
Start of Noble Fat: Catering!
We started with sustainable and local catering in Chicago, selling Filipino-inspired dishes
2019
Farmer's Markets
Noble Fat joined the Logan Square Farmer's Market and Green City Market at Lincoln Park serving Pan-Asian food using local ingredients
2022-2024
Introducing matcha
We started introducing matcha on an online shop and added it to the farmer's market menus at the Logan Square Farmer's Market
2025 — Present
Cafe Opening!
In August 2025, we opened up our cafe location in Lincoln Park. We rotate between seasonal menu items, so stop by and try our flavors!
